Avocado Toast
Hard Boiled Egg Version
Poached Egg Version
Ingredients:
1/2 of a small avocado, mashed
1/4 of a small lime squeezed
1 teaspoon scallion, minced or pickled onion
1 teaspoon of chopped dill
3 slices of Roma Tomato
pinch sea salt
pinch pepper
1 slice sprouted wheat bread, toasted or sourdough
1 large poached egg or 1 hard-boiled egg, sliced
Directions:
1. Mix the first 7 ingredients together
2. Spread on toast
3. Poach egg for 5 1/2 to 6 minutes in a poach pod for a runny egg
4. Place the poached egg on top toast with avocado spread
5. Gently chop the egg to allow the yolk to run
6. Sprinkle Everything Bagel Seasoning on top and enjoy!
