Zucchini Bread

 Zucchini Bread



Ingredients:

3 large eggs

1 cup avocado oil

2 cups sugar

1 teaspoon salt

2 teaspoons cinnamon

3 cups zucchini, peeled and grated, or finely chopped

1 teaspoon vanilla

1 teaspoon baking soda

1 teaspoon baking powder

1/2 cup walnuts, chopped

3 cups flour

Directions:

1. Preheat oven to 350 degrees.

2. Beat eggs until foamy.  Add oil, sugar, zucchini, and vanilla.

3. Sift dry ingredients together.  Add dry ingredients and nuts to the egg mixture.

4. Divide batter into 2 loaf pans that have been greased and floured.

5. Bake for 45 to 60 minutes or until a toothpick or knife comes out clean.

6. May also be baked in a Bundt pan.
