Beef & Broccoli

 Beef & Broccoli


Ingredients:

1/2 pound lean beef, cut into strips

1 small onion, cut into 8th's

1 head of broccoli, cut into bite-sized pieces

4 tablespoons beef stock

1 tablespoon peanut oil

Marinade:

1 tablespoon cornstarch

1/4 teaspoon pepper

1 tablespoon soy sauce

1 tablespoon sherry

1 small garlic clove, minced

1/8 teaspoon ground ginger

1 teaspoon sesame oil

2 teaspoons oyster sauce

2 cups cooked rice

Directions:

1. Mix together all marinade ingredients and marinate meat for at least 1/2 hour.  I like to marinate meat for 4 hours.

2. Stir-fry broccoli and onion in peanut oil for 2 minutes.

3. Add beef stock and simmer for 3 minutes, then remove from the wok.

4. Add more peanut oil to the wok and stir-fry the beef until brown.

5. Add broccoli and onion into the wok with the beef and stir-fry for 1 minute.

6. Serve with rice.
