Dijon Vinaigrette from Simone Baldeon

 Dijon Vinaigrette
from Simone Baldeon 1986


Ingredients:

2 tablespoons Dijon mustard

1/4 cup red wine vinegar

3/4 cup olive oil

2 teaspoons minced shallot (optional)

1 teaspoon raw honey (optional)

Directions:

1. Whisk together the mustard and vinegar until blended.

2. Slowly whisk in the oil.  It will be thick.

3. Can add fresh herbs, finely minced shallot, garlic, honey, salt, and pepper. Use an immersion blender if adding any of these other ingredients.
