Italian Peasant Soup

Ingredients:
2 large carrots, chopped
2 large celery stalks, chopped
1 medium onion, chopped
1/2 cup parsley, finely chopped
2 tablespoons olive oil
2 teaspoons granulated garlic, or 2 or 3 cloves, minced
1 tablespoon basil
1/2 teaspoon pepper
32 ounces Italian-style tomatoes, in puree (2 cans)
8 cups chicken bone broth
28 ounces cannellini beans, drained (2 cans)
4 boneless, skinless chicken breasts, cooked and chopped
Directions:
1. Cook chicken in crock pot in canned tomatoes and puree for 4 hours on high.
2. Saute carrots, celery, and onion in oil in a skillet. Add garlic, basil, and pepper.
3. Remove cooked chicken from the crock pot and chop. Return chicken to the crock pot.
4. Add all remaining ingredients to the crock pot and continue simmering on low for one hour.
