 Mashed Potatoes from Cathy Rough



Ingredients:

2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks (about 5 cups)

3/4 cup hot whole milk 

2 tablespoons butter

1/2 teaspoon salt

1/4 teaspoon black pepper

4 cloves of minced garlic

1/2 cup grated mozzarella cheese

3 tablespoons Italian bread crumbs

Directions:

1. Place potatoes in a large pot and add enough water to cover the potatoes. Cook 13 to 15 minutes, or until very tender. Drain.

2. Return cooked potatoes to the pot and stir over medium heat about 1 minute.

3. With a potato masher, mash in hot milk, butter, garlic, salt and pepper. Beat with a wooden spoon until potatoes are smooth and creamy. Stir in mozzarella cheese.  Transfer to a greased casserole dish and sprinkle the top with bread crumbs.  Bake in a 350-degree oven for up to 30 minutes.
