Split Pea Soup

 Split Pea Soup

 


 Ingredients: 

2 Yukon gold potatoes, peeled and diced

2 carrots, peeled and diced

2 ribs of celery, diced

8 cups of water

2 Tbs. Chicken bouillon granules or the equivalent

1 pound of split peas

½ package of fresh dill or more 

Kosher salt to taste

Directions: 

Heat  a few tablespoons of olive oil, add

Potatoes, carrots, and celery sautéed until soft

Add water, split peas, dill, chicken broth, salt, and dill

Bring to  a boil

Reduce heat

Simmer until  split peas are soft and soup is creamy

Stir frequently while cooking

Add more water if the soup gets too thick.

Salt and pepper to taste
