Strata Made Overnight

Ingredients:

1 1/2 pounds pork sausage, pan-fried, used sage pork sausage ground, you can also use ham or make it meatless

1 medium onion, chopped

5 cloves garlic, minced or pressed

16 ounces of mushrooms, chopped - used baby bellas

12 large eggs, whisk

3 cups gruyere cheese, shredded

2 tablespoons mustard, Dijon

1 pint heavy cream

1 teaspoon sea salt, add more if desired

1 teaspoon pepper, fresh ground

24 ounces of bread, cubed & dried or stale - used 1 entire loaf of seeduction from Whole Foods, or a large round of sourdough

1 tablespoon butter

1 tablespoon avocado oil

Strata Before Cooking


Directions:

1. Brown sausage, then remove from the pan, leaving about 1 to 2 tablespoons of grease

2. Saute chopped onion in pork grease until just beginning to brown - then add minced garlic and saute for one minute - then remove from pan and add to pork - if making meatless, then saute in avocado oil

3. Add butter and saute mushrooms in pan until liquid is gone and mushrooms a beginning to brown - about 10 minutes - then remove and add to pork, onion, garlic mixture

4. In a large bowl, whisk 12 large eggs with 1 pint (2 cups) heavy cream, 2 heaping tablespoons Dijon mustard, salt, pepper - then add cheese and whisk more

5. If bread cubes are not stale or dry enough, put them in the oven on a baking sheet at 275 degrees for 30 minutes

6. Grease pans - 2 casserole dishes or one large roasting pan

7. Add dry bread cubes, then pour the remaining ingredient mixture over the bread and mix together

8. Refrigerate overnight

9. Remove from the refrigerator to come down to room temperature

10. Preheat oven to 375 degrees

11. Bake for 45 to 50 minutes or until brown on top with a knife coming out clean from the center (center not jiggling)

12. Let sit for about 10 minutes before serving
