Italian Antipasto Salad
Ingredients:
2 large heads of romaine lettuce, washed and dried
1 large stalk of celery, chopped
2 medium carrots, chopped or shredded
3/4 cup English cucumber, thinly sliced
1/4 cup red onion, thinly sliced
2 medium radishes, sliced
1/2 large green pepper, sliced
3 medium Roma tomatoes, seeded and chopped (or grape or cherry tomatoes)
1/2 cup hard salami, chopped
1/2 cup Italian ham, chopped
1/2 cup pepperoni, chopped
3/4 cup sharp provolone cheese, cubed
Pasta can also be mixed into the salad, but reduce the lettuce
Italian Dressing Ingredients Mix: (Make ahead and store with spices)
· 2 tablespoons oregano
· 2 tablespoons salt
· 1 tablespoon garlic
powder
· 1 tablespoon onion
powder
· 1 tablespoon granulated
sugar (or Monkfruit)
· 1 tablespoon parsley
· 1 teaspoon ground
black pepper
· 1 teaspoon basil
· ¼ teaspoon thyme
· ¼ teaspoon celery
seed
Italian Dressing:
· 2 tablespoons Italian
dressing mix
· ¼ cup vinegar (Red
Wine or Balsamic)
· 2 tablespoons water
· ⅔ cup oil (Olive Oil or Avocado Oil)
· ½ tablespoon Dijon mustard (optional)
Directions:
1. Toss all ingredients together.
2. Prepare dressing as directed above.
3. Serve dressing on the side.
4. Meats and cheese can also be served on the side.
5. You can also add olives, or red, yellow, or orange peppers.
6. Serve with crusty bread.
