 Egg Salad


Ingredients:

6 large eggs, hard-boiled, finely chopped

1/2 cup mayonnaise

1 tablespoon mustard, Dijon

1 stalk celery, chopped

2 tablespoons fresh dill weed, finely chopped (I like a lot more)

salt & pepper, to taste

Directions:

1. In a large bowl, mix all ingredients together until well blended

2. Transfer to a serving bowl

3. Garnish with a sprig of fresh dill (optional)

4. Refrigerate until ready to serve

5. Makes a great sandwich or is served on a bed of lettuce with sliced tomato

6. For a sweet egg salad, substitute sweet relish for the dill weed
