Irish Soda Bread
Ingredients:
2 1/2 cups flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup baking raisins
2 teaspoons caraway seeds
1 cup buttermilk
Directions:
1. Preheat oven to 375 degrees.
2. Thoroughly combine flour, sugar, baking powder, salt, and baking soda in a large bowl using a whisk.
3. Stir in raisins and caraway seeds.
4. Stir in buttermilk to make a soft dough - it will be sticky.
5. Turn out onto a lightly floured surface and knead lightly 3 times.
6. Shape dough into a round loaf and place on a greased baking sheet.
7. Cut an X 1/4 inch deep in the top of the loaf.
8. Bake at 375 degrees for 35 to 40 minutes or until golden brown.
9. Cool. Slice. Great toasted with butter.
