Mondel Bread
Ingredients:
1 cup sugar
1 cup avocado oil
3 large eggs, beaten
1 teaspoon vanilla
3 cups flour
2 teaspoons baking powder
1/2 cup mini-chocolate chips
3 ounces slivered almonds
1/4 cup cinnamon sugar
Directions:
1. Preheat oven to 375 degrees.
2. Blend oil and sugar, then add eggs.
3. Add remaining ingredients. Do not add the cinnamon and sugar mix.
4. Shape into 3 equal logs on a parchment-lined large cookie sheet.
5. Sprinkle with cinnamon and sugar mix.
6. Bake 20 minutes.
7. Cut each log into 1/2 inch pieces and turn each piece on it's side then sprinkle with more cinnamon and sugar.
8. Bake an additional 10 minutes.
9. Will look like biscotti, but not as hard. You can also melt chocolate and dip one side in the melted chocolate. Let cool.
