Orzo with Everything
Kathy Gardner is the mother of Jill Gardner,
who was Christina's first roommate at Ohio University
Ingredients:
1 pound of orzo pasta
1/3 cup sun-dried tomatoes, drained and chopped
5 tablespoons virgin olive oil
1/4 cup balsamic vinegar
1/4 cup kalamata olives, chopped - sub favorite olives
1 cup radicchio, finely chopped - sub chopped fresh spinach
1/2 cup pine nuts, toasted
1/2 cup fresh basil, chopped
1/2 cup grated Parmesan cheese - sub feta or gorgonzola crumbles
2 large garlic cloves, minced
Directions:
1. Cook orzo until al dente and drain.
2. Transfer to a large bowl and add tomato, oil, vinegar, and olives. Toss. Let it stand and cool.
3. Mix chopped radicchio, pine nuts, basil, cheese, and garlic into the orzo mixture.
4. Serve at room temperature.
