 Quiche from Mary Galligan



Ingredients:

2 tablespoons butter, or avocado oil

1 medium onion, diced

1/2 cup mushrooms, chopped (optional)

1/2 teaspoon granulated garlic, or 2 cloves, minced fresh garlic 

1 cup heavy cream

4 ounces Swiss cheese, grated or gruyere cheese

4 ounces ham, diced

4 large eggs, whisked until air is well incorporated

1/4 cup parmesan cheese, grated

salt and pepper to taste

1 Pillsbury pie crust, optional for a crustless quiche

1 teaspoon parsley flakes

Directions:

1. Preheat oven to 375 degrees.

2. Saute onion and mushrooms in butter or oil until onion is transparent. Then add garlic and saute for one more minute.

3. Add cream and let thicken slightly over medium heat, stirring often.

4. Let the mixture cool for a few minutes, then add the cold ingredients to the warm in a large bowl or saute pan if there is room.  Stir together.

5. Pour into pie shell. (I omit and make it crustless)  Sprinkle top with parsley flakes. 

6. Bake for 30 minutes.
