Chicken Salad

 Chicken Salad from Christine Duffy

I worked with her at The Last Best Place, Cincinnati, OH


Ingredients:

3 to 4 skinless, boneless chicken breast halves, cooked and chopped

1/2 cup mayonnaise

1/2 cup sour cream

1/2 teaspoon lemon juice

1 cup celery, diced

1 cup onion, diced

1 cup red grapes, halved (optional)

1/2 cup blanched almonds, roughly chopped

1/4 cup parsley, chopped fine

Directions:

1. Mix all ingredients and refrigerate until served.

2. Variations: add red seedless grapes, honey mustard, or sweet curry.
