Thai Peanut Dressing & Salad - Version 1 without cilantro & hot pepper

Thai Peanut Dressing & Salad 



Dressing Ingredients:

1/4 cup peanut butter

1/2 coconut milk

2 tablespoons soy sauce

2 tablespoons rice vinegar 

2 tablespoons honey

1 tablespoon chili sauce (optional)

2 teaspoons garlic, grated

2 teaspoons ginger, grated

2 tablespoons roasted peanuts, chopped

1 teaspoon toasted sesame oil 

Dressing Directions:

Puree all ingredients in a blender or food processor.

Note: Add enough coconut milk to achieve a pourable dressing consistency.

Salad Ingredients

1 Small head of savoy cabbage, finely sliced

1 Carrot peeled into ribbons, then chopped

1 Celery stalk, chopped

1/2 cup snow peas, roughly chopped

1/4 cup green onion, chopped

1 cup of chopped grilled chicken (optional)

1/4 cup+ chopped roasted peanuts

Sesame seeds, a sprinkle

Crisp wonton strips, topping

Salad Directions:

Toss all ingredients together. Add dressing in advance to slightly soften the cabbage.

Sprinkle with peanuts, sesame seeds, and wonton strips.

Serves 4 to 6
